Hide selection: The selection ranges from 80/20, 90/10, firsts/seconds. This means there will be a maximum of 20%, 10% of seconds respectively.
Firsts: The hides have no holes in the prime area and up to three holes in the offal.
Seconds: Hides with up to three holes in the prime area and up to three or more holes in the offal.
Trim: All hides are trimmed to remove faces, ears, and lips. Tails are shortened or tail root trimmed. Necks largely cut off in what is known as “Eurotrim”, or in some cases straight cut as is found with Halal slaughtered cattle.
Curing: All hides are cured freshly hand and/or machine salted and are left in salting stacks for no less than 21 days.
